Healthy chicken, avocado, cucumber, tomato salad



I came across this yummy recipe and wanted to share it.


You can have it as a meal by itself, or leave out the chicken and serve it as a side dish. Avocado is one of the most nutritious fruit in the world with over 25 essential nutrients.


Ingredients:

12-14 oz boneless chicken breast, sliced up, olive oil to grease pan to saute.


Marinade:

2.5 tbsp olive oil

1/2 tbsp water

4 tbsp fresh lemon juice

1 tbsp balsamic vinegar

1/2 tsp garlic powder

2 tsp dried parsley

2 tsp dried basil

1 tsp sea salt

1/8-1/4 tsp black pepper


Salad:

1 lg avocado

1 cucumber,diced

1.5-2 cups cherry tomatoes, sliced

1 sm red onion sliced

2 tbsp crumbled feta to sprinkle on top


Directions:

Combine marinade ingredients and mix. Reserve 1/2 for later to use as salad dressing.

Add chicken to marinade and coat well, cover, put in frig for about 20 minutes. After marinading cook chicken, let cool. In large bowl combine all salad ingredients and chicken, pour remaining salad dressing over salad, add feta on top.
